VINIFICATION
- Process
- Maceration and fermentation for 4-5 weeks in stainless steel tanks and large wooden barrels (3000 liters). Part of the fermentation occurs with natural yeasts.
- Aging
- 12 months in barrique barrels (225 liters) made of French (80%) and Slavonian (20%) oak. Barrels are 50% one year old and 50% new. Bottle aging for 12 months before release to the market.
